Three Ingredient Pancakes


Bananas, Egg & Baking Powder. Boom.

Tastes like fried plantains, all sweet and caramelized only they are packed with protein and just lightly pan fried. The bananas have enough sweetness that you can forgo the maple syrup entirely. My kids ask for seconds and even thirds. Great way to use up ripe naners too!

1 Egg

1 Banana (large) or 1.5 Bananas (small)

1/4 teaspoon of Baking Powder

Beat together and add any of your favorite add ins (cinnamon, vanilla, pecans, etc…)

Scoop into lightly oiled or buttered pan and cook like a pancake. Outside with get caramelized and inside will stay soft even when well cooked. I usually double or triple the recipe so there is enough for 2-3 people.

Kids love making them as well and you can make them into faces using berries and whip cream. I made Indy an Olaf plate by stacking them vertically on the plate to looking like a snowman and used chocolate syrup as the stick arms. Have fun with it!
