Cookie Dough Hummus

The first time I had this at a potluck it totally blew my mind! The look, texture and taste of cookie dough yet it was made with garbanzo beans. What?! So I have made it now a few times and it a great semi healthy sweet treat. Plus it’s a conversation starter. Serve it with graham crackers, sliced apples or just eat it with by the fistful like my toddler was doing this afternoon when the crackers were gone.

Cookie Dough Hummus

1 can of garbanzo beans *

1/8 teaspoon of baking soda

heaping 1/8 teaspoon of salt

1/4 cup nut butter

1/3-2/3 cup brown sugar ~ or sweetener of choice agave, maple syrup, coconut sugar. I have tried a few but think brown sugar really gives it that cookie dough flavor. Start with a little and add more if you like it sweeter.

2 teaspoons vanilla extract

1/3 cup chocolate chips

almond flour or oats as needed for thickening

graham crackers for serving

sliced apples for serving

*rinse beans very well. If you have time boil with some water for 5 minutes to help mute the bean flavor and make them more creamy

Combine first six ingredients in a food processor and pulse for 30-60 seconds until well integrated. Taste for sweetness and remember that the chocolate chips add quite a bit. Add more sweetener if necessary and flour/oats for thickening if needed. Fold in chocolate chips and serve with crackers and sliced apples. Watch people wonder what’s in it.
